What each ingredient does

Pork
The meat being cured, which becomes the bacon as it dries and smokes.
Saltpetre
Helps preserve the meat and gives cured meat its characteristic pinkish colour.
Brown sugar
Adds sweetness and balances the harshness of the salt.
Coarse sea salt
Draws moisture out of the meat, slowing spoilage and firming its texture.
Common salt
Draws moisture out of the meat and helps preserve it during curing.
Treacle
Adds sweetness, dark colour and molasses flavour to the cure.

The step that matters

Covering all parts of the meat with the cure. Salt and saltpetre must reach every area to preserve the meat evenly. Uncovered spots can spoil, so the cure must cover all surfaces, and turning and basting daily keeps the pickle in contact with the meat.
