Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Roast Fowl

Ingredients

Directions

Prepare and roast

  1. Fill the breast of the fowl with forcemeat.

  2. Roast the fowl as usual until nearly ready to serve.

Crumb and brown

  1. Remove the fowl from the fire and pour lukewarm butter over it.

  2. Strew the fowl thickly with fine bread crumbs and sprinkle with more butter.

  3. Dip the fowl into additional crumbs.

  4. Optionally mix savoury herbs, spices, and lemon zest with the crumbs.

  5. Return the fowl to the fire until it is a clear, light brown all over.

Serve

  1. Carefully remove from the spit, dish, and serve with lemon sauce and gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine fowl
Forms the main body of the dish, which is roasted until cooked through.
Forcemeat
Fills the breast, adding moisture and flavour as the bird roasts.
Butter
Adds fat that carries browning and gives the crumb coating a rich, golden finish.
Fine bread crumbs
Form a crisp coating that browns in the heat, sealing in moisture.

The step that matters

Returning the fowl to the fire for browning. Crumbs and butter brown quickly through the Maillard reaction, so the bird can darken unevenly or scorch if heat is too high. Watch for a clear, light brown colour rather than dark patches.
