Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hare
Provides the main meat, which becomes tender through long, gentle stewing.
Butter
Browns the hare joints and adds richness to the stew.
Rice flour
Thickens the stewing liquid so it becomes a light, smooth sauce.
Gravy
Forms the cooking liquid that keeps the meat moist and carries flavour.
Lean ham or bacon
Adds savoury, salty flavour and browns in the butter to deepen the stew.

The step that matters

Ten minutes before serving, mix the rice flour with mushroom catsup and stir into the stew.. Rice flour dropped straight into hot liquid clumps; mixing it first into a smooth paste with catsup lets it disperse evenly and thicken the sauce without lumps.

Swap the mace

How well each one fits the dish's main ingredients (ham, butter, lemon, rice, flour, mushroom):

  3. Turmericfits better
  4. Macethe original
