To Roast a Pheasant

Ingredients

Directions

  1. Pluck the feathers from the pheasant and cut a slit in the back of the neck to remove the crop.

  2. Draw the bird and clean the inside with a damp cloth or by pouring water through it.

  3. Wipe the outside with a dry cloth and cut off the toes.

  4. Turn the head under the wing with the bill along the breast and skewer the legs without crossing them.

  5. Flour the pheasant well and place it over a brisk fire, basting constantly with well-flavored butter.

  6. Serve with bread sauce and good brown gravy.
