What each ingredient does

Ribband macaroni
Forms the bulk of the dish and absorbs the curried sauce as it is tossed.
Beef or veal stock or gravy
Supplies the liquid base and savoury depth for the sauce.
Curry powder
Provides the main spiced flavour and aroma of the dish.
Arrowroot
Thickens the stock so the sauce clings to the macaroni.
Cream or béchamel
Adds richness and a smoother, silkier texture to the sauce.

The step that matters

Boiling the stock with curry powder and arrowroot. Curry powder must simmer long enough to lose its raw, dusty taste, and arrowroot must be fully heated to thicken properly; under-boiling leaves the sauce thin and harsh.
