Cook and serve

  1. Flour and fry them lightly in butter, or place them in curried gravy to cover.

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the body of the curry.
Butter
Adds richness and gives light browning when the slices are fried.
Lemon juice or chili vinegar
Adds acidity that brightens the rich, spiced gravy.

The step that matters

Let the sweetbreads cool completely before slicing. Cooling firms the delicate tissue so slices hold their shape instead of breaking apart when floured, fried or stewed.

Swap the mango

The recipe marks mango as optional. How well each one fits the dish's main ingredients (onion, veal, butter, lemon):

  1. Limefits about as well
  2. Avocadofits about as well
  3. Coconutfits about as well
  4. Mangothe original

Fit is the average pairing score against onion, veal, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
