Cucumbers in Brown Gravy

Ingredients

Directions

  1. Peel and slice the cucumbers, then season with white pepper or cayenne.

  2. Flour and lightly fry the cucumbers in a little butter.

  3. Remove the cucumbers from the pan and drain on a sieve.

  4. Place the cucumbers in enough brown gravy to nearly cover them.

  5. Stew gently for 25 to 30 minutes until tender.

  6. If the gravy needs thickening, remove the cucumbers and keep them warm.

  7. Stir a little flour and butter into the gravy to thicken it.

  8. Optionally, add lemon juice or chili vinegar for flavor.
