Why it works: Cucumber and onion match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 6,050 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Fried Cucumbers to Serve in Common Hashes and Minces

Ingredients

Directions

  1. If using regular cucumbers, peel them; if very young, leave the skin on.

  2. Slice the cucumbers and dredge them lightly with pepper and flour, omitting salt at this stage.

  3. Heat butter or clarified dripping in a pan until very hot.

  4. Add the cucumbers to the hot fat; they will not brown if the fat is not hot enough.

  5. When nearly done, sprinkle salt over the cucumbers.

  6. Once they are tender, lift them out with a slotted spoon and drain well.

  7. Place the fried cucumbers lightly over the hash or mince.

  8. If desired, fry a small portion of onion with the cucumbers.
