Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sponge cakes
Form the bulk of the layers and soak up the custard as it sets.
Egg yolks and egg whites
Set the custard as they cook, giving the pudding its firm body.
Milk and sweet cream
Provide the liquid base of the custard, adding moisture and richness.
Powdered sugar
Sweetens the custard so it tastes sweet once set.
Macaroons and ratifias
Add almond flavour and a crisp-soft texture among the layers.

The step that matters

Let it stand before serving. Standing for a few minutes lets the set custard firm up, so the pudding holds its shape when turned out instead of breaking.

Swap the raisin

How well each one fits the dish's main ingredients (egg, milk, cream, sugar):

  1. Vanillafits better
