Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Butter a round or square cake tin and line it with thin slices of stale bread, cut to fit perfectly and dipped in clarified butter.

  2. Fill the mould to the brim with apple marmalade.

  3. Cover the top with slices of bread dipped in butter.

  4. Place a dish, large plate, or the cover of a French stewpan on top with a weight.

  5. Bake in a 400°F (200°C) oven for 45 minutes if small, or 1 hour if large.

  6. Carefully turn it out and serve hot.
