What each ingredient does

Green gooseberries
Provide the fruit body, tartness, and natural pectin that helps the jam set.
Sugar
Sweetens the jam and, as it concentrates during boiling, helps it thicken and keep.

The step that matters

Boil quickly for 45 minutes. A fast, steady boil drives off water so the sugar concentration rises and the pectin can set the jam. Too gentle a boil leaves it runny, while scorching happens if it is not stirred.
