What each ingredient does

Green gooseberries
Provide the fruit that becomes tender and translucent when cooked and dried.
Sugar
Sweetens the fruit and, dissolved in the syrup, helps preserve it as it dries.
Water
Dissolves the sugar to make the syrup the gooseberries simmer in.

The step that matters

Simmering in syrup. Simmering only until the fruit turns clear and tender, rather than boiling hard, keeps the skins intact and the flesh from breaking down. Sugar in the syrup gradually replaces water in the fruit, which is what helps the dried result hold its shape and stay chewy.
