What each ingredient does

Cherries
Form the fruit base that softens in syrup and dries into a chewy, concentrated texture.
Powdered sugar
Sweetens the fruit and draws out moisture, forming a syrup that preserves it as it dries.

The step that matters

Simmer gently. Gentle simmering softens the cherries and lets sugar penetrate without bursting the skins or boiling the syrup too fast. Vigorous boiling can toughen the fruit and make the syrup crystallise or darken unevenly.
