Strawberry-jelly
Ingredients
Directions
Gather strawberries on a dry day after the morning dew has passed.
Remove the stems and place strawberries in an enamelled saucepan over high heat.
Gently stir the strawberries with a wooden or silver spoon until the juice flows abundantly.
Simmer the strawberries for about 30 minutes, ensuring they do not become thick or pulpy.
Strain the mixture through a clean sieve into a pan and let it drain until no more juice drops.
Strain the juice again through a muslin cloth, then weigh it in a basin.
Boil the juice in a clean preserving pan for 15 to 20 minutes, stirring often.
