What each ingredient does

Black currants
Provide the fruit body, flavour and natural pectin that gives the jam its set.
Black currant juice
Adds extra liquid and concentrated currant flavour, helping the fruit break down and cook evenly.
Sugar
Adds sweetness and helps the jam set and keep by binding water and thickening the mixture.

The step that matters

Removing half the currants once boiling. Pressing the fruit against the pan extracts juice and pectin, which helps the jam set. Removing part of the fruit keeps the texture from becoming too stiff while the rest cooks down.
