Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  2. Grease a baking sheet with butter.

Make the dough

  1. Work the butter into the flour until crumbly.

  2. Mix in the sugar, salt, candied rind, and nutmeg.

  3. Pour in the boiling cream or milk and mix slightly.

  4. Add the egg yolks and mix until well combined.

  5. Dust in the baking soda and mix well.

Bake

  1. Drop spoonfuls of the mixture onto the baking sheet.

  2. Bake until firm to the touch and golden underneath, about 15 to 25 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the buns together as they bake.
Butter
Adds richness and tenderness by coating flour particles and carrying flavour.
Egg yolks
Add richness and help bind the mixture into a cohesive dough.
Baking soda
Reacts with the acidity in the mixture to produce gas that lifts the buns.
Sugar
Sweetens the buns and promotes browning on the surface during baking.

The step that matters

Dust in the baking soda and mix well.. Baking soda must be evenly distributed through the dough so it reacts uniformly; clumps can leave bitter spots and uneven rising.
