What each ingredient does

Sugar
Forms the syrup base and provides sweetness once dissolved in the water.
Egg white
Coagulates when heated, trapping impurities so they rise as scum that can be skimmed off.

The step that matters

Place over gentle heat without disturbing once scum forms. Stirring or jostling the pan once the egg white has formed scum breaks up the coagulated layer, mixing impurities back into the syrup and clouding it. Gentle heat lets the scum float and set so it can be skimmed cleanly.
