Cambridge Milk Punch
Ingredients
Directions
Make the punch
Combine 2 quarts of new milk and the thinly pared rind of 1 lemon with ½ pound of sugar in a pot.
Slowly bring the mixture to a boil, then remove the lemon rind.
Take the pot off the heat and quickly stir in the whisked eggs mixed with ½ pint of cold milk, strained through a sieve. Ensure the milk does not boil after adding the eggs.
Gradually add 1 pint of rum and ½ pint of brandy.
Serve
Froth the punch and serve immediately in warm glasses.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Coagulate when gently heated, giving the punch body and a creamy, thickened texture.
- Sugar
- Adds sweetness and balances the sharpness of the lemon and spirits.
- Rum
- Adds spirited flavour and aroma to the punch.
- Brandy
- Adds warming depth and aroma alongside the rum.
- New milk
- Forms the creamy base that the eggs and spirits are blended into.
The step that matters
Keep the milk from boiling after adding the eggs. Egg proteins set when heated too far, so the punch can curdle or turn grainy. Removing the pot from the heat before stirring in the eggs and keeping the mixture below boiling helps it stay smooth.
