Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Releases starch and flavour into the water, giving the drink its body and mild grain taste.
Sugar
Adds sweetness to balance the mild grain flavour.
Lemon peel
Adds aromatic citrus oils that flavour the water.

The step that matters

Letting it stand overnight. Barley needs a long steep in hot water to release its flavour and soluble starch. Stopping early leaves the drink weak and thin, so the full steeping time matters.

Swap the lemon

How well each one fits the dish's main ingredients (barley, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better

Fit is the average pairing score against barley, sugar. Candidates are from the same food group and used in at least 100 recipes.
