Bring the water to a boil, then stir in the coffee immediately.
Allow it to boil strongly for 1-2 minutes.
Settle and keep hot
Remove from heat and let it simmer for 10 minutes.
Pour a large cupful of coffee from the pot and back in, holding it high.
Set the pot on the stove to keep hot for another 10 minutes without simmering.

What each ingredient does
- Coffee
- Provides the flavor and color, as its soluble compounds dissolve into the hot water.
- Water
- Acts as the solvent that extracts flavor from the coffee grounds.
The step that matters
Pour a large cupful of coffee from the pot and back in, holding it high.. Pouring from height cools the surface slightly and helps stir the liquid, which encourages loose grounds to settle so the coffee pours clearer.
