To Dress Crab Cold

Ingredients

Directions

Prepare the crab

  1. Pick out the meat from the crab and place it in one plate, and the claw meat in another.

Dress and fill

  1. Add bread crumbs, cayenne, essence of anchovy, common vinegar, clarified butter, and elder vinegar to the crab meat and mix thoroughly.

  2. Clean the crab shell and place the dressed crab meat at one end and the claw meat at the other.

Garnish and finish

  1. Pound the spawn in a mortar, rub it through a sieve, and lay it over the crab in a diamond pattern.

  2. If there is no spawn, substitute with lobster spawn and garnish with parsley and small claws.

What each ingredient does

Crab meat
Forms the main body of the dish and carries its flavour.
Bread crumbs
Absorb moisture and help bind the crab meat into a soft mass.
Clarified butter
Adds richness and a smooth, moist texture to the crab meat.
Common vinegar
Adds acidity that brightens the rich flavours of the crab and butter.
Essence of anchovy
Adds a salty, savoury depth to the dressing.

The step that matters

Rub the spawn through a sieve. Pounding and sieving breaks the spawn into a fine, even paste. Coarse lumps would sit unevenly on the crab and spoil the smooth look of the diamond pattern.

Swap the parsley

How well each one fits the dish's main ingredients (crab, meat, bread, pepper, anchovy, vinegar, butter):
