A Devonshire Squab Pie

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

  1. Remove gills from oysters and keep them stirred to prevent sticking.

  2. Mix currants with powdered sugar, nutmeg, and salt.

  3. Combine melted beef suet and butter with water to form a paste.

  4. Boil the mixture and pour it into a well of flour, knead, and roll out for the crust.

  5. Cover the dish with the crust, layer sliced apples, seasoned mutton, more apples, and a mixture of onions and apples.

  6. Pour in 1 pint of water, cover the pie, and bake in a moderate oven (350°F / 175°C).

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
