What each ingredient does

Beef palates
Main protein; simmering and stewing make it tender and easy to peel.
Butter
Enriches the sauce and, with flour, forms a roux that thickens it.
Flour
Thickens the butter and gravy sauces so they cling to the palates.
Cream
Adds richness and a smooth, silky texture to the fricassee sauce.
White wine
Adds acidity and aroma that brighten the rich veal gravy.
Veal gravy
Provides savory depth and body as the main sauce liquid.

The step that matters

Thicken the sauce. Flour-and-butter thickening needs gentle simmering so starch swells fully and no raw floury taste remains. Adding it too fast or at a rolling boil can cause lumps or a sauce that is too thin or grainy.

Swap the mace

How well each one fits the dish's main ingredients (beef, pepper, butter, flour, milk, cream, mushroom):

  1. Nutmegfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against beef, pepper, butter, flour, milk, cream, mushroom. Candidates are from the same food group and used in at least 100 recipes.
