Larks, and Other Small Birds

Ingredients

Directions

  1. Pick, gut, and clean the birds, then truss them.

  2. Brush the birds with the egg yolk and roll them in bread crumbs.

  3. Skewer the birds on a lark spit and tie it to a larger spit.

  4. Roast over a hot fire for 10 to 15 minutes, basting with fresh butter.

  5. Sprinkle additional bread crumbs over the birds while roasting.

  6. Fry the grated bread in clarified butter and let it drain to harden.

  7. Serve the hardened crumbs under the larks and garnish with lemon slices.
