Leeks and Onions

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil large white onions until tender, then drain.

  2. Slice the onions thinly and place them in a shallow baking dish.

  3. Dot the onions with butter and sprinkle with pepper and coarse sea salt.

  4. Shave stale cheese thinly and layer it over the onions.

  5. Sprinkle bread crumbs on top.

  6. Bake in a 400°F (200°C) oven for 10 minutes.
