Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

Assemble the pie

  1. Layer mutton chops or mutton at the bottom of a pie dish.

  2. Sprinkle onions, pepper, coarse sea salt, sugar, and water over the meat.

  3. Thinly slice apples and potatoes, and layer them on top of the meat.

  4. Cover the sides and top of the dish with pie crust.

Bake

  1. Bake until well cooked, about 2 hours.

What each ingredient does

Mutton
Provides the main meat filling that becomes tender during long, slow baking.
Apples
Add sweetness and moisture, softening as they bake beneath the crust.
Potatoes
Add starch and body to the filling as they cook through in the pie.
Pie crust
Encloses the filling, trapping steam and moisture inside the dish while it bakes.
