What each ingredient does

Cooked veal scraps
Forms the main body of the ringlets and gives them their savoury flavour.
Egg
Binds the minced meat so the ringlets hold their shape when steamed and turned out.
Bread crumbs
Absorbs moisture and helps keep the mixture tender rather than dense.
White stock
Adds moisture so the mixture stays soft while it steams.

The step that matters

Steaming the shapes. The water must stay at a steady simmer and the shapes must be covered, so the egg sets gently and the mixture cooks through without drying or cracking. Too little water lets the pan boil dry partway through.
