Ingredients
Directions
The book says “a slow oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Mince dressed veal, ham, parsley, and marjoram together.
Grate in lemon zest, nutmeg, salt, and white pepper.
Moisten the mixture with gravy or stock and heat until warm.
Line paté pans with puff pastry about ½ inch thick.
Place a crust of bread in the bottom, wet the edges of the pastry.
Cut out a matching piece of pastry and place it on top.
Bake in a 400°F (200°C) oven until golden.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
