What each ingredient does

Eggs
Bind the mixture and add structure as they set during cooking.
Bread crumbs
Absorb liquid and give the pudding a soft, sturdy body.
Beef suet
Adds fat that keeps the pudding moist and rich in texture.
Brown sugar
Adds sweetness and a deep, molasses-like flavor.
Flour
Helps thicken the mixture and gives the pudding its structure.
Raisins
Provide chewy texture and concentrated sweetness.

The step that matters

Keeping the water boiling for the full 9 hours. The pudding is cooked gently by steam and boiling water over a long time. If the water drops below a boil, the pudding cooks unevenly and stays heavy, so the pot must be topped up with boiling water as it reduces.

Swap the currant

How well each one fits the dish's main ingredients (raisin, beef, bread, apple, ginger, cinnamon, nutmeg):

  1. Figfits better

  3. Pearfits better

Fit is the average pairing score against raisin, beef, bread, apple, ginger, cinnamon, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
