Apple Tart, No. 2

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry and cut it to fit the size of your dish.

  3. Cut a 4-inch circle from the center of the pastry and set it aside.

  4. Line the dish with the pastry, cutting it neatly around the edge.

Assemble

  1. Fill the lined dish with the prepared apples, heaping them in the center.

  2. Roll out the leftover pastry into small straws and lay them over the apples in a crisscross pattern.

  3. Brush the edge of the pastry with the beaten egg and place the pastry cover on top.

  4. Nick the edges and draw small flowers on the top.

Bake and serve

  1. Bake for 30 minutes in the preheated oven.

  2. Serve with a sprinkle of grated sugar.
