Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Egg whites
Bind into the hot liquid and clarify the jelly as they coagulate, leaving it clear.
Sugar
Sweetens the jelly and balances the sharpness of the orange juice.
Orange juice
Provides the main orange flavour and acidity.
Orange rind
Adds aromatic orange oils for fragrance and extra flavour.

The step that matters

Strain through a heated jelly bag. Straining while the jelly is hot keeps it liquid so it runs through the bag. Cooling it first can cause it to set in the bag and cloud or clog it, leaving the jelly less clear.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
