Why it works: Ginger and orange match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 1,833 recipes. Both carry 1-octen-3-one, which smells mushroom, metallic. The science ↓

Spice Nuts

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Heat the treacle in a saucepan.

  2. Mix in the raw sugar, melted butter, Jamaica pepper, ground ginger, caraway seeds, carbonate of soda, and minced orange peel.

  3. Place the flour on a clean surface and pour the mixture into it to form a dough.

Shape and bake

  1. Roll out the dough and cut into nut shapes using a round cutter.

  2. Place the nuts on greased baking tins and top each with a small slice of sweet almond.

  3. Bake in a cool oven at 300°F (150°C) for about 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Treacle
Adds sweetness, moisture and a deep flavour that helps the dough hold together.
Flour
Provides the structure that holds the dough together when rolled and cut.
Butter
Adds fat for tenderness and richness in the dough.
Carbonate of soda
Reacts with the acidic treacle to lighten the dough and help it spread and brown.
Ground ginger
Contributes warm, aromatic spice flavour to the nuts.

The step that matters

Bake in a cool oven. Treacle and sugar brown and can scorch quickly, so a low, gentle oven lets the nuts dry and colour evenly without burning.

Swap the orange

How well each one fits the dish's main ingredients (sugar, butter, pepper, ginger, caraway, flour):

  1. Lemonfits better
  2. Limefits better

  4. Orangethe original

Fit is the average pairing score against sugar, butter, pepper, ginger, caraway, flour. Candidates are from the same food group and used in at least 100 recipes.
