Currant Loaf

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Mix the dough

  1. Work the melted butter into the loaf-bread dough.

  2. Add the stoned raisins, cleaned currants, orange peel, and mixed spices.

  3. Knead until the fruit and spices are thoroughly mixed with the dough.

Prove and bake

  1. Grease an oven tin and a cake hoop, then place the hoop on the tin.

  2. Put the loaf into the hoop, cover it, and let it stand in a warm place for 1 hour to prove.

  3. Bake in a hot oven at 400°F (200°C) for 1 to 1.5 hours.

  4. Glaze the top with a mixture of sugar and water.
