Why it works: Whisky and rum match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 107 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

What each ingredient does
- Loaf sugar
- Sweetens the punch and balances the sharpness of the lemon juice.
- Lemon juice
- Adds acidity, which brightens the drink and curdles the milk so it can be removed.
- Whisky
- Provides the main spirit flavour and alcohol strength of the punch.
- Pale jamaica rum
- Adds aromatic, sweet, and fuller flavour to the spirit blend.
- New milk
- Acid curdles its proteins, which the straining then removes, leaving the punch clear and mellow.
The step that matters
Pour the milk in without stirring. The acid in the punch curdles the hot milk's proteins into fine curds. Stirring breaks these curds into smaller particles that pass through the jelly bag and cloud the punch. Leaving it still lets the curds form larger clumps that strain out cleanly.
