What each ingredient does

Cucumbers
Provide the main vegetable body, which softens into a tender, moist mass as it cooks.
Butter
Adds fat and richness, carrying flavor and helping the cucumber pieces cook smoothly in the pan.

The step that matters

Cover closely and cook slowly after the initial high heat. Cucumber is mostly water. A tight lid traps steam so the pieces soften in their own liquid, and the gentler heat afterward lets them become very tender without scorching in the thick-bottomed pan.
