What each ingredient does

Sticking or shin of beef
Tough cut that becomes tender and rich after long gentle simmering.
Onion
Frying until brown adds sweetness and deep savoury colour to the stew.
Vinegar
Acidity that helps tenderise the meat during marinating.
Breadcrumbs
Stirred in near the end to thicken the cooking liquid slightly.

The step that matters

Frying the onion until brown. Browning builds deep, savoury flavour through the Maillard reaction. Pale onion gives a flatter stew, while burnt onion turns bitter, so watch the colour closely.
