Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Eggs in Cases
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 400°F (200°C).
Butter 4 small paper ramekin cases or china cases inside.
Assemble
Sprinkle a little pepper, salt, and chopped parsley in the bottom of each case.
Carefully drop an egg from the shell into each case.
Sprinkle a little grated bread and cheese over each egg.
Place a small bit of butter on top of each egg.
Bake and serve
Bake in the oven for about 3 minutes until the eggs set.
Serve in the cases.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Set into a firm but tender custard as they cook, forming the main body of the dish.
- Grated bread
- Adds a light crumb on top that helps the surface brown as it bakes.
- Grated cheese
- Melts and browns on the surface, adding savoury flavour and golden colour.
- Butter
- Adds richness and moisture, and helps the top brown in the hot oven.
The step that matters
Baking until the eggs just set. Egg whites set at around 60 to 70°C and yolks thicken more gradually. Removing the ramekins once the whites are opaque and the yolks still look soft keeps the yolks runny and prevents a rubbery texture from overcooking.
Swap the parsley
How well each one fits the dish's main ingredients (egg, pepper, cheese, bread, butter):
- Parsleythe original
- Nutmegfits about as well
- Thymefits less well
- Sagefits less well
Fit is the average pairing score against egg, pepper, cheese, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
