Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal breast
Provides the tender meat that becomes the main body of the dish after slow simmering.
Butter and flour
Form a roux that thickens the stock into a smooth, velvety sauce.
Egg yolks
Enrich and thicken the sauce as they gently set when heated off the boil.
Lemon juice
Adds acidity that brightens the rich, creamy sauce.
Mushrooms
Add earthy flavour and a soft texture to the sauce.

The step that matters

Adding the egg yolks. Egg yolks thicken by gentle heat; if the sauce is boiling when they go in, they can scramble and turn grainy. Remove from heat before stirring them in.

Swap the clove
