What each ingredient does

Celery
Forms the tender, crisp vegetable core that the coating surrounds.
Egg
Binds the flour to the bread crumbs so the coating adheres during frying.
Fine bread crumbs
Form the crisp, golden outer crust when fried.
Parmesan cheese
Adds savory flavor and helps the crumb coating brown.

The step that matters

Heating the fat until smoking hot. Fat that is not hot enough soaks into the coating instead of crisping it, leaving the celery greasy and pale. Hot fat sets the crumbs quickly and browns them.
