Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the meat flavour and rich body of the broth as it simmers.
Pearl barley
Releases starch as it cooks, thickening the broth and adding body.
Milk
Adds creaminess and mild sweetness, softening the broth's savoury edge.

The step that matters

Simmer slowly for 4 hours. A gentle simmer draws flavour and gelatin from the meat without toughening it. Boiling hard makes the broth cloudy and the meat stringy.

Swap the parsley

How well each one fits the dish's main ingredients (mutton, barley, milk, pepper):

  1. Celeryfits about as well

  3. Parsleythe original
  4. Cinnamonfits about as well
