Why it works: Lemon and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

Prepare

  1. Skin, wash, and dry the lambstones, then flour them.

  2. Fry the lambstones in hot hog's lard until golden brown.

  3. Place them on a sieve to drain while making the sauce.

Make the sauce

  1. Thicken veal gravy with flour and butter over low heat.

  2. Add lemon slice, mushroom ketchup, lemon pickle, nutmeg, and beaten egg yolk mixed with cream to the gravy.

  3. Stir until hot but do not boil to prevent curdling.

Combine and serve

  1. Add the fried lambstones to the sauce and gently shake to combine.

  2. Serve immediately in a hot dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lambstones
Provide the main meat, which is floured and fried to a golden crust.
Flour
Coats the meat for browning and thickens the veal gravy into a sauce.
Egg yolk
Enriches and thickens the sauce when combined with cream and gently heated.
Thick cream
Adds richness and body to the sauce along with the egg yolk.
Butter
Adds richness and flavor to the thickened gravy.

The step that matters

Stir the sauce without boiling. Egg yolk thickens the sauce by gentle heat, and boiling can scramble it and cause curdling, so the sauce must only be heated until hot.
