Savoury Toasts

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 400°F (200°C).

  2. Select tender pods of moringa or young brintals for toasting.

  3. Boil the flower-pods in salted water until tender.

  4. Cut off the buds and heat them in a saucepan with thickened cream or milk thickened with egg yolks.

  5. Pour the mixture over hot fried toasts and serve immediately.

  6. For a variation, trim and chop your choice of fish, season with Nepaul pepper and a little salt, and knead with butter.

  7. Spread the fish mixture on toasted bread.
