Pie-crust

Ingredients

Directions

  1. Choose a cool place to work and ensure the butter is firm and dry.

  2. Mix the flour with baking powder on a cool surface, forming a ring.

  3. Add the egg yolk, salt, and a little iced water to the center of the ring.

  4. Gradually work the flour into the mixture until a smooth dough forms.

  5. Pat the dough into a lump and chill in the ice box for 15 minutes.

  6. Roll out the dough to the size of a dinner plate, place the butter in the center, and wrap the edges over it.

  7. Turn the dough upside down and roll it out thinly, then fold it in thirds.

  8. Place on a baking sheet over a pan of ice and repeat the cooling process after each fold.

  9. Use the dough as soon as possible after completing five turns.
