Fish Au Gratin

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Slice the fish into ½ inch thick portions.

  3. Boil the macaroni until tender.

  4. Slice the tomatoes and set aside.

  5. Butter a pie dish and arrange the macaroni at the bottom.

  6. Dust the macaroni with Parmesan cheese.

  7. Layer the sliced tomatoes on top of the macaroni.

  8. Place the fish portions on top, adding a piece of mushroom and a slice of tomato between each.

  9. Pour the sauce blonde over the dish and sprinkle with more Parmesan.

  10. Bake for about 15 minutes, adding a little white wine or gravy as needed.
