  2. Pour ½ cup clarified butter into a deep dish.

  3. Strew the bottom with minced mushrooms, parsley, and chopped eschalots or green onions.

Assemble

  1. Place the cleaned whitings on top and season with salt and white pepper or cayenne.

  2. Sprinkle more herbs over the fish.

  3. Pour 1-2 glasses of light white wine into the dish.

What each ingredient does

Whitings
The main protein, which cooks gently in the butter, wine and steam under the crumbs.
Clarified butter
Carries heat evenly and adds richness, helping the crumbs brown and the fish stay moist.
Bread crumbs
Form a crust on top that browns in the oven and seals in moisture.
Mushrooms
Add moisture and savory, earthy flavor as they soften in the butter.
Light white wine
Adds acidity and aroma and produces steam that keeps the fish moist.

The step that matters

Covering the fish with a thick layer of bread crumbs. Crumbs that are too thin or unevenly spread can let the fish dry out or brown unevenly, while a thick, butter-coated layer forms a crust that protects the fish and browns well.
