Why it works: Onion and carrot are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 21,601 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Aspic, or Clear Savour Y-jelly
Ingredients
Directions
Make the stock
Boil calf's feet, veal, ham, onions, carrots, and herbs in water until reduced by more than half.
Strain the mixture and let it cool completely, then remove all fat and sediment.
Clarify the jelly
Place the jelly in a clean saucepan and add beaten egg whites; stir until nearly boiling.
Simmer for 15 minutes, then let it settle.
Pour through a jelly bag until clear.
When it begins to boil, add mace, peppercorns, and salt to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Calf's feet
- Provide gelatin, which sets the stock into a firm jelly as it cools.
- Knuckle of veal
- Adds body and savoury depth to the stock, along with more gelatin from bones and connective tissue.
- Lean ham
- Contributes savoury flavour to the stock.
- Egg whites
- Coagulate and collect cloudy particles, clarifying the jelly as it is heated and strained.
The step that matters
Remove all fat and sediment after cooling. Fat and fine particles left in the stock will cloud the jelly and can stop it from looking clear. Chilling lets fat solidify on top so it can be lifted off cleanly.
Swap the mace
How well each one fits the dish's main ingredients (veal, ham, onion, carrot, egg):
- Parsleyfits better
- Celeryfits better
- Marjoramfits better
- Macethe original
Fit is the average pairing score against veal, ham, onion, carrot, egg. Candidates are from the same food group and used in at least 100 recipes.
