Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Browning them in butter builds deep, sweet flavour that gives the sauce its body and colour.
Butter
Fat that carries the onion flavour and helps the onions brown.
Flour
Thickens the sauce as it cooks with the gravy.
Beef or veal gravy
Forms the liquid base of the sauce and supplies savoury meat flavour.

The step that matters

Browning the onions to a deep yellow brown. Onions that are only lightly softened give a pale, flat sauce. Cooking them until deep golden brown develops sweet, rich flavour through browning reactions, which then carries through the whole sauce.
