What each ingredient does

Button mushrooms
Provide the main flavour and soft texture of the sauce.
Béchamel or white sauce
Forms the creamy base that carries the mushrooms and thickens the sauce.
Butter
Adds richness and fat to the thickened base of the sauce.
Flour
Thickens the white sauce so it coats the mushrooms.

The step that matters

Simmering the mushrooms. Simmering for too short a time leaves mushrooms firm and raw-tasting, while overcooking makes them rubbery and can break down the sauce. Checking for tenderness at the lower end of the range helps keep their texture right.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, sauce):

  1. Capersfits better
  2. Garlicfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against mushroom, sauce. Candidates are from the same food group and used in at least 100 recipes.
