Ingredients

Directions

Prepare

  1. Hang the joint until it is perfectly sweet.

  2. Remove the marrow pipe from the backbone and cut out the kernels from the fat.

  3. Guard the meat from flies and wipe away any moisture with a dry cloth.

  4. Dust the surface with powdered ginger or pepper.

Roast

  1. Spit the beef firmly and place it near the fire to firm the surface.

  2. Baste constantly and let it cook until the heat penetrates the interior.

  3. For the last half hour, move it closer to the fire to brown it well.

  4. If desired, dredge with flour at the start and sprinkle with salt near the end.

What each ingredient does

Sirloin of beef
Forms the main body of the dish, cooked whole on the spit.
Flour
Dusted on at the start to help form a browned surface.

The step that matters

Move the joint closer to the fire for the last half hour. Browning happens at the surface through heat and dry, exposed meat; moving it closer too early or too late changes the crust. Constant basting keeps the surface moist so it browns evenly rather than drying or scorching.

Swap the ginger

How well each one fits the dish's main ingredients (beef, flour):

  1. Jalapenofits better
  2. Turmericfits better
  3. Nutmegfits better
  4. Gingerthe original

Fit is the average pairing score against beef, flour. Candidates are from the same food group and used in at least 100 recipes.
