Veal Goose

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the veal by removing any excess fat and skin, leaving about 1 inch of flesh.

  3. Make a stuffing by mixing chopped sage and onions with salt and pepper.

  4. Spread the stuffing over the veal, roll it up tightly, and secure with kitchen twine.

Roast and serve

  1. Roast the veal in the preheated oven for 1 hour.

  2. Serve with brown gravy and apple sauce.

What each ingredient does

Veal
Forms the main body of the roast, and its lean meat cooks to a tender, sliceable texture.
Onions
Add moisture and sweetness to the stuffing as they soften and release their juices.
Sage
Adds a savoury, aromatic herb flavour that complements the rich veal.
